La Casara Roncolato was founded around 1920 among the hills of Roncà, near Verona, in a place called Brenton. It is here that Ermenegildo Roncolato, along with his sons Angelo and Romano, begins the cheese-making activity. He will be succeeded by Romano, who in '64 acquires the Social Dairy that he will call La Casara Roncolato.
This artisan company is now managed by the children: Giovanni, Gildo, and Letizia, who, guided by experience and tradition, enthusiastically and passionately create interesting dairy varieties while preserving the ancient recipes for production and aging from the past.
With a blend of tradition and innovation, today La Casara is dedicated to creating unique and award-winning dairy varieties as well as cured meats and salami, making the best use of the resources of Lessinia and respecting the natural cycles of production and maturation.
