Davide is ready to share with you the secret of a great hand-made pasta, kept within his family for four generations!
The class will make you test your skills with the rolling pin, while learning the family craft among the tables of the workshop. Under Davide’s watchful eye, you will learn to knead and hand-roll the pasta. In our workshop, everything is done by hand, even cutting the pasta into traditional shapes (tagliolini, pappardelle, and tagliatelle) is done using only a knife and the chef’s expertise. You can then enjoy a well-deserved rest while tasting the traditional dishes of Trattoria Caprini.
Don’t worry if you’re a beginner, all it takes for this course is the willingness to get your hands dirty!
Program Overview:
- Brief introduction on how to prepare a dough
- Preparing a dough together with the chef Working the dough with a rolling pin until obtaining a sheet of pasta
- Aperitivo with wine and appetizers made by the chef
- Cutting the pasta into the three traditional sizes: tagliolini, tagliatelle, pappardelle
- Lunch/dinner based on three pasta dishes like the one prepared, with seasonal sauces
- End of the course
