The owner-operated facility covers an area of about 3,000 square meters, with the ham factory operating on two floors.
The ham aging sector has a potential of 30,000 pieces in various types. The processes directly supervised by the ownership, even though they make use of modern technological structures, maintain a strong artisanal character by corporate choice to ensure the utmost care of the products.
Aging in the facility for the various types occurs over 12, 14, or 16 months.
The hams from Soave are strictly made from nationally heavy pigs, tattooed and guaranteed, weighing between 12 and 15 kilograms, and are produced to be processed under existing DOP regulations. All farms of origin are located in Emilia, Lombardy, and Veneto. Production ranges from 25,000 to 30,000 hams per year.
The company's clientele is distributed across the three main food sectors: producers with ham and salami factories, distribution with wholesalers and stores, and food service with restaurants and hotels.
